Chow Mein

This Chow Mein is better than take-out! Enjoy!

Ingredients:
2 T. peanut oil
1 clove garlic, minced
6 oz. thinly sliced beef tenderloin or chicken breast
1 1/2 cup celery, sliced
1/2 cup water chestnuts, sliced thin
1/2 cup Chinese pea pods, sliced thin, lengthwise
1/2 cup carrots, shredded
1 cup bamboo shoots, shredded
1 tsp. salt
2 T. soy sauce
1 tsp. sherry
1 cup chicken broth
1 T cornstarch
1/2 cup water
Hot cooked rice

Directions:
Heat oil in skillet or wok. Add garlic and meat and quickly brown. Remove meat and set aside. Add celery, water chestnuts, peas, carrots, bamboo shoots, salt and soy sauce. Cook and stir until vegetables are tender but crisp. Add sherry and broth. Cover and bring to a boil. Mix cornstarch with water and add to broth. Cook until slightly thickened. Serve with rice.

Serves 4.

Hi Shiloah -
Thanks so much for your comment on my post about Twilight. I've gotten a number of e-mail responses from Twilight aficionados giving me their interpretation of the books which differ from mine. I realize it's just a story, but it's the underlying message that I don't care for. Aside from the possessiveness, I don't care for the pressuring for sex, lying to parents, running away, and suicide attempts. I'm glad to know I'm not the only one who feels that way!
